Sweet Potato Spaghetti Recipe 

 

INGREDIENTS

3½ cups sweet potato, cubed

½ cup full-fat coconut milk

½ cup light coconut milk

1 tsp onion powder

1 tsp garlic powder

½ tsp dried rosemary

½ tsp salt

1 box spaghetti noodles

 

METHOD

Cook spaghetti noodles according to package. Set aside for later use. Peel and cube the sweet potatoes. Add several cups of water to a medium saucepan and bring to a boil. Once boiling, add in the cubed sweet potato and cover. Let cook for 30-40 minutes, until the sweet potatoes become soft. After, drain water from the boiled sweet potatoes. Combine the boiled sweet potatoes, coconut milk, onion powder, garlic powder, dried rosemary and salt in a high speed blender. Blend until smooth. Transfer the sauce into a large saucepan. Add in the cooked spaghetti noodles. Mix together and allow to warm up for a few minutes. Garnish and serve warm.
